Can I wash my Passey knife in the dishwasher?

PLEASE, PLEASE NEVER PUT YOUR KNIFE IN THE DISHWASHER!

There are a number of reasons why you shouldn’t put your knife in the dishwasher including:

1) Washing your knife in the dishwasher can affect the temper of the steel (how hard it is) which can impact on how well it will hold a nice sharp edge, causing it to blunt more easily. We put a lot of effort into choosing the steel, heat treating it just right to get the optimal level of hardness and toughness for our kitchen knives - putting it through the dishwasher can ruin that and diminish the knife’s most important features.

2) The extended exposure to hot water and steam in the dishwasher can damage handle materials, particularly wooden handles, causing them to discolour or even to split or come apart.

3) Depending on the blade steel, the dishwasher can cause the blade to discolour, tarnish or rust. This is particularly apparent with high carbon steels such as 1084, 15N20 and 26C3 (also known as spicy white). Stainless steels are less affected, but stainless is really ‘stain resistant’ not ‘stain proof’ so even stainless steels could be affected by harsh detergents and washing conditions in the dishwasher so it’s best to steer clear.

So, how should I take care of my Passey knife?

Caring for your knife is pretty simple.

1) After use wash it with warm soapy water and dry it immediately. Don’t put it away wet.

2) Give the blade a bit of an oil every so often, especially if you’re not using it for a while. You can use any food safe oil, but I like to use Camelia oil.

3) Sharpen it when needed. To sharpen it yourself, I’d recommend getting a whetstone.

Who makes the knives?

All the knives are made by me, including the forging, grinding, sanding, handles and finishing. I also sometimes do collaborative projects with @hyphencutlery, which is a fun way to try out new ideas and work on things together.
